Pellegrino's Passito di Pantelleria Nes is 100% Zibibbo cultivated with Pantelleria sapling, a Unesco heritage. On the island, the soils are of volcanic origin, sandy and slightly clayey and the vineyards are between sea level and 300 metres above sea level; here the climate is purely Mediterranean, with mild winters, limited rainfall and hot and breezy summers, conditions that allow the natural health of the plants. The harvest takes place in mid and late September, with careful selection of the bunches. A part of the grapes is gently pressed and fermentation begins; after a certain time, the number of grapes left to dry in the meantime is added, and the fermentation process continues until the desired residual sugar content is reached. The wine then ages in steel vats, at a controlled temperature, for 10 months.

Pellegrino's Passito di Pantelleria Nes is a beautiful golden yellow with amber reflections. The nose is intoxicating, with intense notes of candied fruit, apricot and date in the first place, orange blossom and refreshing hints of sage and eucalyptus. In the mouth, it is sweet and fresh citrus, slightly savoury and with beautiful sensations of dried fig and canned peach. Very good with traditional almond paste-based desserts, as with cannoli.
