Here, the soil is volcanic, and the altitude is about 200 meters above sea level. A portion of the grapes is hand-harvested in the second half of August and sun-dried on special mats for at least two weeks; the remaining grapes ripen on the vine until the first week of September, when they are harvested and vinified. At advanced fermentation - started by indigenous yeasts - the previously sun-dried grapes, hand-de-stemmed, are added and left to macerate for about 3 months. The wine is aged for at least 6 months in barrels, followed by a period in stainless steel tanks.
Passito di Pantelleria Bukkuram Sole d'Agosto by Marco De Bartoli appears in the glass with a golden yellow color and amber reflections. Dried apricot, Mediterranean scrub, candied citrus, honey, and saffron are just some of the aromas that make up its intoxicating olfactory bouquet. On the palate, it is soft, finely aromatic, delicately fresh, and saline, supported by an elegant balance between residual sugar and alcohol content.
