The Negroamaro Passo Marchese by Paolo Leo is a 100% Negroamaro produced from the vineyards of Sava and Manduria, in the province of Taranto. The harvest generally takes place in the last decade of August. The grapes are de-stemmed and gently pressed, cooled to 5°C and left to macerate on the skins for about 2 hours, giving the must a slight pinkish hue.
