Le Tribute Cenizo Mezcal is made in Durango from 100% wild Cenizo agave, matured for 8 years. Production focuses on the heart of the plant: the jima is cut to about 1.5 cm from the piña to limit bitter notes and preserve the part richest in sugars.

From the heart of the agave, made traditionally

The piñas are cooked in underground volcanic-stone ovens fired with holm oak, a step that contributes complexity and the characteristic smoky character. The entire process is carried out by hand, from harvesting the agave through to packaging and labelling. Two new agaves are planted for every plant harvested.

Aroma and tasting profile

Clear in appearance, it offers a soft, herbaceous and smoky aroma. The palate is pleasant and balanced, with notes of aromatic herbs, smoke and subtle spice. The finish is persistent, carrying the smoky character through.
