Le Difese by Tenuta San Guido is made from Cabernet Sauvignon (70%) and Sangiovese (30%) grapes grown within the Tenuta San Guido estate in the Bolgheri (LI) region. The vineyards, facing south and southwest, lie on soils predominantly composed of limestone, rich in galestro and stones, with some clay content, at an altitude between 100 and 300 meters above sea level. The harvest was carried out manually, with Cabernet picked in early September and Sangiovese at the end of the month. Alcoholic fermentation took place in stainless steel tanks at a controlled temperature of 29-30°C, using indigenous yeasts. The must macerated on the skins for 10-13 days for Cabernet and 13-15 days for Sangiovese. Before bottling, Le Difese was aged for 8 months in oak barriques.

Le Difese presents itself in the glass with a deep ruby red color. The nose reveals aromas of sour cherry and small red fruits, complemented by floral hints of violet and dark oriental spices, along with delicate herbal notes. On the palate, it is smooth and harmonious, enhanced by elegant tannins and a fresh, savory finish that lingers. It pairs beautifully with cured meats, aged cheeses, and rich meat-based dishes such as red meats or game.
