Corpo medioIvag di Cascina degli Ulivi is a white wine that Stefano Bellotti "intentionally downgraded" from DOC to table wine, not wanting to conform to the rules of the regulations, which he considered to be opposed to his way of thinking and slaves to the market. For this reason, the grapes that make it up do not appear on the label (and theoretically cannot be declared). Cascina degli Ulivi, first in the revolutionary and provocative figure of Stefano, today with the heir of his thinking, his daughter Ilaria, mainly cultivates Cortese grapes, then Moscato, Traminer, Sauvignon Blanc, Ancellotta, Barbera, Dolcetto and Merlot; despite the fact that the company is located within the boundaries of the Gavi denomination, as mentioned above, none of the wines are labeled as such. We are on the border between Piedmont and Liguria, in Novi Ligure, the soils are clayey and iron-ferrous, not generous and difficult to cultivate. Over the years, the idea of a self-sufficient company that Stefano dreamed of takes shape more and more: in fact, alongside the vineyard, there are arable fields, woods, orchards, a vegetable garden, and a breeding of Cabannina cattle, to support the work in the Agriturismo. The vineyards that produce PLACEHOLDER_WINEEXTRACTED, 5 total hectares, are about 60 years old; the grapes are pressed, destemmed, and spontaneously fermented in 25 hl oak barrels, where they then continue aging for 12 months. No sulfur is added at any stage.
PLACEHOLDER_WINE presents itself as an ancient straw yellow color. On the nose, it has grace and depth, with notes of hawthorn, yellow plum, chalk, and slightly salty undertones. On the palate, it is refreshing, with freshness embraced by minerality and smooth drinkability. Perfect pairing with Mesc-ciúa spezzina, the soup that has warmed generations of dockworkers: chickpeas, beans, and spelt.
