Hanami Merlot Rosato Terre Siciliane by Cantine Fina is made from 100% Merlot grapes harvested in mid-August, with a yield of about 85 quintals per hectare. In the winery, the must was transferred to stainless steel tanks filled with nitrogen at a temperature between 0 and 1°C. Here, it was left in contact with the pulp in suspension for about 15 days, a process called maceration. Alcoholic fermentation took place at a controlled temperature for 8 days; finally, the wine refined its characteristics for 3 months on the lees in stainless steel.
