Corpo leggeroThe white label Gavi La Scolca is the most traditional wine of the company. The Cortese grapes are those of the young vineyards in the heart of Rovereto, the "Gran Crù" of Gavi. Vinification takes place at a controlled temperature (temperature control serves to ensure that fermentation develops slowly and constantly and that there are no fermentation blocks, with the death of the wine yeasts and the possible triggering of fermentation by other unsuitable fungi or bacteria; in the case of whites and rosés, it is also particularly important to preserve the aromas). The Gavi DOC denomination was established only in 1974 (the DOCG in 1998), but the first historical source that speaks of "cortese vines" dates back to 1972.
Gavi La Scolca is pale straw yellow in colour; on the nose, it is delicate, flowery, with notes of pear and mineral references. On the palate, it is very tight, with an important floral acidity and a certain flavour. Very good with the traditional warm seafood salad or with the peppered mussels.
