The vineyard, due to its natural conformation, has areas where the rows are more sparse and the fruits of the plants derive greater nourishment. By respecting the natural characteristics of the terroir in the vineyard and in the cellar, a wine with unique organoleptic notes and remarkable aging potential is obtained. The soil, microclimate, and sea winds significantly contribute to the wine's sensory characteristics; the large temperature range between night and day that characterizes the final stage of grape ripening also intensifies the typical aromas of the Cortese grape variety. After the harvest, the grapes are gently pressed; this is followed by skinless fermentation in stainless steel tanks at a controlled temperature and maturation, always in steel for 6 months.

The Gavi of Gavi Vigne Rade di La ToledanaGavi Vigne Rade from La Toledana has a bright straw yellow color with greenish reflections; the aroma is pleasant and delicate, with hints of fresh fruit, mainly apple and pineapple, and white flowers, hawthorn and daisies in bouquets, then citrus notes of lemon and bergamot, hints of green almond and typical chalky minerality. The taste confirms the aromatic approach, with beautiful salinity, freshness, and a floral finish. Excellent with baked sea bream and Jewish-style artichokes.
