COS's Frappato is a post-adolescent love wine. In its fresh perfection it hides a danger: the risk of drinking an unseemly quantity. The Frappato di Vittoria grapes are grown organically at about 250 metres above sea level, on red soils with sub-Apennine sands of calcareous origin. The vineyards are located in the heart of the appellation, between Acate and Vittoria, distributed in the Bastonaca and Fontane districts, with vines of an average age of 12 years. The harvest takes place between the end of September and the beginning of October. Fermentation occurs spontaneously in concrete tanks, with indigenous yeasts; the ageing is carried out again in concrete, then in the bottle.

FRAPPATO COS: TASTING

COS Frappato is presented in the glass with a bright pale ruby colour. On the nose, it is mineral and very fragrant of Mediterranean scrub with notes of fruit and blood orange, almost to remember, as an organoleptic palette, a vermouth, obviously without the weight of alcohol. On the mouth, it is fresh and savoury, with a subtle body, but great satisfaction. To drink first on its own, then accompany for example with stewed baby octopus, or with stuffed mussels, or even with roast chicken.
