Corpo medioThe Fiano Exultet di Quintodecimo is a cru produced exclusively with grapes from a single vineyard located in Lapio. Quintodecimo is in the heart of the DOCG Taurasi area, about 80 km northeast of Naples, with an altitude reaching 570 meters for this vineyard, on clayey-calcareous soils. As Professor Moio emphasizes, "The landscape of Irpinia is very original for a southern Italian environment. The visitor will not find sunny plains, sunburnt hills, sweltering heat, but rather plenty of greenery, with lakes, forests, and often mountains covered, up to the top, with chestnut trees, beech trees, and ancient oaks." The grapes are harvested by hand at perfect ripeness; after a long pressing of the whole bunches, the free-run must, rigorously protected from oxygen, is separated from the press must and clarified by natural sedimentation. Fermentation takes place 70% in stainless steel tanks and 30% in new oak barrels. This is followed by an eight-month period of aging on fine lees regularly stirred in the wine.
The Fiano di Avellino Exultet from Quintodecimo is a luminous gold color with green reflections. The nose reveals clear varietal aromas of linden, acacia, and thyme, enriched by hints of Williams pear, walnut husk, and sea notes. The palate is dense and dynamic, with continuous aromatic returns of exotic fruit, candied citrus, and honey, on a fresh and salty background. A glorious wine to pair both with Carbonara and lobster linguine.
