During the production of Chianti Classico DOCG 2021 - Castello dei Rampolla, primarily Sangiovese grapes are used, constituting at least 80% of the grape composition. Fermentation takes place in stainless steel tanks under temperature control for about 20 days. Subsequently, the wine is aged for 12 months in French oak barrels and continues to mature in the bottle for another 6 months. Vinification takes place in the area of Greve in Chianti, in the Tuscany region. The vineyards are cultivated on clayey and calcareous soils with a privileged sun exposure.

The aroma is characterized by notes of cherry, violets, and spices, with a pleasant hint of vanilla. The taste is balanced with a good structure, soft tannins, and a long and persistent aftertaste. This wine has good aging potential and is recommended to be tasted at a temperature of 16-18°C. It pairs perfectly with red meat, mature cheeses, and Tuscan dishes.
