Corpo medioThe Chardonnay Cuvée Bois di Les Crêtes, produced since 1995, is one of the symbols of Italian Chardonnay with wood aging. The vineyards, totaling 4 hectares, have an average age of twenty years and are located in Frissonière di Saint Christophe, on steep slopes, with a mixed soil composition (morainic, loose, sandy), between 550 and 750 meters of altitude. Harvesting takes place in the second half of September with careful selection. Once in the cellar, the grapes are chilled and gently pressed as whole clusters. Fermentation occurs in 300-liter French oak barrels, toasted over an open flame; in these same barrels, the wine ages “sur lies” for 12 months, with weekly bâtonnages. The wine then rests for an additional two months in the bottle before being released onto the market.
Les Crêtes Cuvée Bois presents a beautiful intense straw yellow color with golden reflections; on the nose, it is intense and complex, with aromas of white fruit, hazelnut, vanilla, banana, candied cedar, and subtle mineral nuances in the background. On the palate, it is substantial, savory, fresh, and buttery. Perfectly paired with Bacalà alla Vicentina.
