The Chardonnay Sanct Valentin di San Michele Appiano was produced from 100% chardonnay grapes selected from the best company vineyards for exposure in the municipality of Appiano (BZ). Here the soil is of a calcareous-gravelly nature with moraine sediments and the altitude is between 450 and 550 metres above sea level. The refinement was 11 months on the lees (a practice that gives body and greater aroma to the wine) in barrique-tonneaux and a further 6 months in steel vats. It is one of the symbolic wines of the San Michele Appiano winery like all the wines of the Sanct Valentin line that come from fine selections and are characterised by finesse and longevity potential.
The Chardonnay Alto Adige DOC Sanct Valentin of San Michele Appiano shines in the glass with a straw yellow colour with greenish reflections. Intense notes of ripe yellow pulp fruit combine with delicate toasted and vanilla hints that reveal the passage in wood. With a good structure, on the palate it is full and enveloping, made vigorous by an exciting minerality. Long and very pleasant the fruity finish with a subtle smoky trail. White with a versatile nature, at the table it goes well with fresh and semi-aged cheeses, as well as vegetarian dishes and seafood recipes. Also to be tried paired with first or second courses based on white meats.
