The Bollinger Champagne Special Cuvée bears his name thanks to the intervention, in 1911, of an English sales agent, who suggested to George Bollinger to change the "Brut sans année" to "Special", written in English, without accents, more effective and more suited to the verve of that wine, compared to the traditional French expression. The Cuvée is made up of 60% Pinot Noir, 25% Chardonnay and 15% Pinot Meunier, almost entirely from Grand and Premiere Cru vineyards; the wines are, in predominant quantities, reserve wines between 5 and 15 years of ageing in Magnum. The dosage is contained between 8 and 9 grams per litre
Bollinger's Special Cuvée has an ancient golden yellow, with textures of fine and dense bubbles; on the nose, it is rich in ripe fruit, peaches and cooked apples, references to the notes of bread and fresh spices. The mouth has a mature taste and elegance: an enveloping vinosity, lots of fruit and great fragrance. Suitable for drinking throughout the meal, delicious with wagyu maki and savoy cabbage, or with chicken tikka masala, or simply with savoury croissants stuffed with good baked ham.
