The company's vineyards are located on land characterized by calcareous-clayey marl of Kimmeridgian origin, with the presence of fossils and minerals in the subsoil. After manual harvesting, the clusters were brought to the cellar and gently pressed to obtain the must. Alcoholic fermentation took place spontaneously in stainless steel and was followed by malolactic fermentation that softened the structure and aromatic profile of the wine. The aging occurred for 8-10 months in stainless steel tanks.
The Chablis di William Fevre appears in the glass with a straw yellow color and bright reflections. The nose reveals aromas of white flesh fruit, wild flowers, and citrus fruits combined with chalky and flinty notes. The palate is fresh and soft, deeply mineral, with a long finish of cedar and aromatic herbs. It pairs well with cheeses, vegetarian dishes, as well as flavorful seafood recipes.
