The Cervaro della Sala di Antinori is an iconic wine. It was one of the first Italian whites to be fermented and aged in barriques. The famous winemaker Renzo Cotarella in 1985 produces the first vintage of this great wine with Chardonnay grapes, with the idea of producing a white wine that is suitable for long ageing. And the experiment was successful. The 2018 vintage was born in Umbria from Chardonnay grapes with a small part of Grechetto harvested between the end of August and the first half of September. Chardonnay carries out alcoholic and malolactic fermentation in barriques and then refines for another 5 months, at the end of which it is blended with 10% of Grechetto which ferments in steel. It spends another 12 months in the bottle before being marketed.
Cervaro della Sala is clearly a white out of the box even in the tasting phase. At the sight it appears with a straw yellow with greenish hues. On the nose, it is complex and broad: exotic fruit, citrus, and toasted notes of vanilla and butter deriving from ageing in wood. In the mouth, the important body is accompanied by a freshness and acidity that end in a long and persistent finish. A good white now and also in 15 years.
