After white winemaking, which involves no maceration of the must on the skins, the aging process lasted 4 months in stainless steel on the fine lees, plus an additional 2 months in the bottle. Caprettone is a white berry grape typical of the Vesuvius area, often confused with Coda di Volpe, and it owes its name to the shape of the cluster that resembles a goat's beard.
The Caprettone Emblema di Cantine Olivella stands out with its intense straw yellow color. On the nose, aromas of white pulp fruit intertwine with scents of wildflowers and hints of flint. The taste is fresh and mineral, with a pleasant floral and fruity flavor.
