It is indeed a wine that, although it comes from a very hot area, is always fresh and aromatic. It is composed of 65 percent Cabernet Sauvignon, 20 percent Merlot and the remaining 15 percent Sangiovese. The grapes come from a 10-hectare vineyard facing the sea, at an altitude of 100 meters, with vines of an average age of 20 years. Harvesting is done exclusively by hand. Vinification begins with open fermentation of the must in conical oak barrels. After malolactic fermentation (a fermentation by lactic acid bacteria that transforms malic acid into lactic acid, changing the wine's acid structure and making it softer) in stainless steel tanks, the wine ages for 18 months in new and used barriques. This is followed by bottle aging for an additional 12 months.
Grattamacco is a beautiful dark ruby red; the aromas are bewitching and juicy: black currants, wild strawberries, cedar wood, rosemary and black pepper. The sip is balanced and satisfying, savory, fresh and long. To be tasted alone and then to accompany a succulent barbecued wild boar.
