Corpo robustoThe Bolgheri Superiore di Caccia al Piano is the new company label composed of 70% Cabernet Sauvignon and 30% Cabernet Franc. The clusters come from a single vineyard, San Biagio, with clay-limestone soil located at an altitude of 210 meters above sea level, a very rare characteristic for the Bolgheri area; the vines are between 15 and 20 years old. Harvesting begins in the second decade of September for Cabernet Franc grapes, followed by the harvest in the first days of October for Cabernet Sauvignon. Selection takes place first in the vineyard, then in the cellar at the sorting table; fermentation takes place in stainless steel at a controlled temperature, for two weeks. After malolactic fermentation, the wine is transferred to French oak barrels of various toasting levels where it remains for over 20 months. Before being released for sale, the wine further ages in the bottle for at least another 6 months.
The Bolgheri Superiore di Caccia al Piano presents itself with an intense and deep ruby color. On the nose, it entices with scents of Mediterranean scrubland, raspberry, blueberry jam, violet, and sweet spices; on the palate, it is well balanced between fruit, aromatic herbs, smooth tannins, savoriness, and freshness. It pairs very well with roast suckling pig and sautéed porcini mushrooms, as well as with wild boar and polenta.
