Corpo robustoBarolo Pio Cesare is the result of the careful selection of Nebbiolo grapes from its own vineyards, located in different positions within the Barolo area: in Serralunga d'Alba (Cascina Ornato, La Serra and Briccolina), in Grinzane Cavour (Gustava and Garretti), in La Morra (Roncaglie), in Novello (Ravera) and, from the 2015 harvest, in Monforte d'Alba (Mosconi). The vinification takes place in steel with maceration on the skins for about 30 days at rather high temperatures. Ageing takes place in French and Slavonian oak barrels for about 30 months and a small part in barriques. As the company also points out in a friendly tone on the label: this is not a “basic” Barolo, but has always represented, and as per tradition, the most faithful expression of the various great terroirs of the Barolo area.
The Barolo Pio Cesare is a very classic style Barolo that presents itself in the traditional garnet guise. The nose is full of dark fruit, fresh and in jam, dried violet, hints of mint, spicy blankets and an intoxicating aroma of fireplace ash. In the mouth, it has body, wonderfully smooth tannins and incredible length. Full enjoyment with a succulent barbecued wagyu ribeye.
