The vinification takes place in steel with maceration on the skins for about 30 days at rather high temperatures. The refinement takes place in French and Slavonian oak barrels for about 30 months and in a small part in barriques. As the company also emphasizes on the label in a friendly tone: this is not a "base" Barbaresco di Pio CesareBarbaresco, but has always been, and as tradition dictates, the most faithful expression of the various great terroirs of the Barbaresco di Pio CesareBarbaresco area.
The extrapolated wine Barbaresco di Pio CesareBarbaresco Pio Cesare has a garnet color with ruby reflections. On the nose, it is deep with great iron mineral notes, which then soften into hints of small red and black fruits in jam, undergrowth, light toasting, violet, and sweet spices. On the palate, it has vigorous tannins, good structure, and a long and balsamic finish. It pairs beautifully with mixed Piedmontese boiled meats.
