Corpo medioThe Vermentino di Vignaioli di Scansano is a late dry harvest composed of 85% Vermentino di Vignaioli di ScansanoVermentino and 15% Viognier; the grapes come from the vineyard of the same name, located at 120 meters above sea level with sandy and loamy soils. The grapes of the two varieties are left on the plant for 3 weeks beyond the regular harvesting time, then harvested and processed separately: placed in a closed press, with an atmosphere saturated with carbon dioxide, and left to macerate at a temperature of 7-8°C for about 12 hours. This is followed by a rather long but low-pressure pressing cycle to extract only the free-run juice; the pressing is stopped when the juice yield reaches around 50% compared to the weight of the grapes, and the juice is allowed to settle for about 72 hours in a tank, at a controlled temperature of about 5-7°C. It is then separated from the settled part and fermentation is initiated with the help of specially selected yeasts, proceeding slowly for three weeks at a temperature of around 15°C. The refinement takes place in steel for three months with fine lees, followed by a few more months in the bottle.
The Vermentino di Vignaioli di ScansanoVermentino Vigna Fiorini from the Cantina dei Vignaioli di Scansano presents an intense straw color with golden reflections. On the nose, it smells of broom, apple, plum, and acacia honey, with slight marine hints. On the palate, it is dry, with pleasant freshness, good sapidity, and a full fruit return. A very versatile wine, perfect with zucchini, onion, and fresh caciotta cheese omelette.
