Corpo robustoThe Valpolicella Ripasso Classico Superiore Solane di Santi was produced from Corvina grapes, with the addition of a small percentage of Rondinella. The reference vineyards, facing South-West and South-East, are located between the valleys of Marano, Negrar, and San Pietro in Cariano (VR), at an altitude ranging from 150 to 300 meters above sea level. The soils are here clayey-limestone based and naturally rich in gravel. After manual harvesting in crates, the clusters were transferred to the cellar. Each plot was vinified separately with a 15-day maceration of the must on the skins. In January of the following year, the wines were re-fermented on the Amarone pomace, thanks to which they gained body, power, and aromatic complexity. Following the blending, the Valpolicella Ripasso Classico Solane di Santi aged for 18 months in European oak and cherry wood tonneaux and barrels.
The Valpolicella Ripasso Classico Superiore Solane di Santi presents a deep ruby red color. On the nose, it releases aromas of sour cherry and ripe red berries along with hints of withered violet and warm notes of vanilla and sweet spices. On the palate, it is savory, intense, and elegant, enhanced by soft tannins and a long fruity and expansive finish. It pairs excellently with aged cheeses as well as rich earthy dishes, especially those based on red meats or game.
