The Spumante Metodo Classico Brut di Banfi comes from Chardonnay, Pinot Nero and Pinot Bianco grapes vinified on the Banfi Piemonte estate which extends between Novi Ligure and Acqui in the province of Alessandria. According to the traditional rules of the Classic Method, this elegant bubble is the result of second fermentation in the bottle with permanence on the lees for at least 24 months. After this long period of rest, the wine was subjected to remuage (on typical supports called pupitres), a practice with which the sediments of fermentation are conveyed near the bottleneck. Subsequently, the dégorgement à la glace took place, an operation whereby the bottle is immersed upside down in a refrigerating solution at -25 ° C. By doing so, the residues placed near the cap freeze and then be pushed out by the internal pressure through the opening.
