Sibona’s 2011 Special Reserve vintage grappa offers another perspective on Barolo, distilled from the pomace of Nebbiolo grapes destined for this celebrated wine. Long maturation gives it the depth and poise of a spirit made for slow appreciation.

From Barolo pomace to oak casks

Fresh, carefully selected pomace is distilled by Sibona in its own copper stills. The spirit rests for an extended period in stainless steel before prolonged maturation in oak casks, first of medium and then of smaller capacity. This ageing contributes a rounded texture and layered aromatic profile.

A distinctive vintage reserve

Its deep amber colour introduces aromas of vanilla, woodland berries and toasted oak. On the palate it is mature, deep and velvety, with balanced woody notes and a long finish recalling vanilla and tobacco.

The individually numbered 70 cl decanter comes in an elegant wooden presentation case. Enjoy it slowly at around 18°C from a tulip or balloon glass, on its own or alongside dark chocolate, nuts and aged cheeses.
