Corpo leggeroThe Asti Spumante di Sansilvestro is strictly produced using the traditional Martinotti Method. The San Silvestro winery reflects the historic Piedmontese model: in addition to the 7 hectares of owned vineyards in Novello, one of the 11 communes of Barolo, it relies on grape growers who deliver the grapes to the company. This is a common practice in many companies in the region, rooted in the 19th century with the parcelization of properties and the evolution of production techniques. Often, in fact, many vineyard owners with small plots were not able to bear the costs of vinification of their own production, and turned to "concentrating" figures, who supplemented their harvest with grapes purchased from contributors, establishing long-term relationships that were carried on for generations, ensuring a constant production in different vintages and creating solid relationships of mutual trust. The careful selection of contributors has always been one of the strengths of San Silvestro, faithful to this production model since its origins.
The Asti Spumante di Sansilvestro has the typical bright straw color, crossed by a generous foam. On the nose it is fine and captivating: after the first immediate reference to ripe and sweet grape, it recalls aromatic herbs, jasmine, and white peach; in the mouth it is fresh, pleasantly sweet, and with a caressing perlage. Excellent with cream and fruit tarts.
