Corpo medioGoverno di Castellare di Castellina is born from 90% Sangiovese 5% Canaiolo and 5% Malvasia Nera grapes grown on limestone-clay soils in the territory of Castellina in Chianti (SI), at an altitude between 350 and 400 meters above sea level. The harvest took place in October with a yield of 70 quintals per hectare. The red vinification took place entirely in stainless steel and, according to the ancient Governo method, involved adding withered grapes after alcoholic fermentation. The aging was 2 months in concrete and 2 months in the bottle.
Governo Castellare di Castellina appears ruby red. On the nose, aromas of red fruit stand out alongside hints of iris and violet, with subtle notes of aromatic herbs. The palate is fresh and balanced, with a pleasant floral taste. It pairs well with cured meats, cheeses, as well as appetizers and main courses with earthy flavors.
