Corpo medioThe Pinot Nero di Ottin is obtained from 100% Pinot Nero di Ottin grapes grown in the territories of the municipalities of Quart and Saint Cristophe, in the province of Aosta. The originating vineyards, facing south and southeast, are rooted in morainic and sandy soils, at an altitude ranging from 650 to 700 meters above sea level. The manual harvest was carried out with a yield of 70/80 quintals per hectare. The winemaking process included a pre-fermentation maceration phase and an alcoholic fermentation of about 10 days activated by indigenous yeasts. Aging took place for 55% in large barrels (20-30 hectoliters) and for the remaining 45% in barriques for a period of 12 months.
Ottin's Pinot Noir presents itself with a light ruby red color with bright reflections. On the nose, it releases aromas of red fruits that intertwine with floral hints of geranium and violet, and notes of licorice and dark spices. Completing the olfactory profile are hints of black tea and tobacco. The palate is soft and elegant, enhanced by a fine tannic texture and a delicate fresh-savory trail that lingers in the long finish. It pairs well with aged cheeses as well as tasty land dishes based on red meats or game.
