The Pinot Nero Castello della Sala di Antinori is obtained from 100% Pinot Noir grapes grown on the company estate Castello della Sala located a few kilometers from Orvieto. The vineyards from which it originates cover 4 hectares, rooting in calcareous soils rich in ditches and sedimentary sands of Pleistocene origin, at an altitude of about 400 meters above sea level. After harvesting, the clusters were destemmed and gently pressed to obtain the must. Alcoholic fermentation took place at a controlled temperature of 26°C and was preceded by a 3-day cold maceration phase. Aging occurred for 8 months in barriques and for a short period in the bottle.

The Pinot Nero Castello della Sala di Antinori presents itself in the glass with a bright ruby red color. On the nose, aromas of cherry and ripe wild berries emerge, blending with slight hints of withered violet and notes of dark oriental spices. The taste is soft and elegant, supported by silky tannins and a long fruity and spicy finish. It pairs well with aged cheeses as well as elaborate dishes based on red meats.
