Corpo medioFrescobaldi's Pinot Nero Pomino is born in the Castello Pomino estate, northeast of Florence, in an area recognised as having a high wine vocation as early as the eighteenth century. The grapes are fermented in 60 hl truncated cone oak vats, at a controlled temperature, with manual punching down, especially in the early stages, which favour the right extraction of anthocyanins and polyphenols from the skins. The maceration time is about two weeks overall. The alcoholic fermentation is followed by malolactic fermentation in French oak barrels. The wine ages, again in barriques, for 15 months followed by a further 4 in the bottle, before being marketed.
Castello Pomino's Pinot Nero 2020 shines in the glass with a beautiful ruby red with slight garnet hues. On the nose, it first hits the notes of small red fruits, then spicy and balsamic nuances are perceived, with a slightly woody background. In the mouth, it is fresh, savoury and with an aromatic structure consistent with the olfactory one. To drink slightly refreshed, in the company of a rabbit with olives, as well as a selection of semi-cured Tuscan cold cuts.
