Corpo medioThe Pinot Noir by Franz Haas is among the best and most appreciated pinot noirs in South Tyrol. Franz is unanimously recognized as one of the people best able to allow this territory to express itself through this difficult, delicate vine. The vines are located at altitudes ranging between 350 and 900 meters, on very heterogeneous soils. The high density plants and the use of selected low yield clones ensure the highest quality of the grapes. The vinification takes place in open tanks in which the fermenting must comes into contact with the skins through frequent pumping over and punching down. Thanks to these techniques, the color and the aromas contained in the peel are extracted and passed to the wine. Subsequently, the wine ages for a year in barrique and after bottling it is further refined for a few months in the bottle.
Depending on the vintage, Franz Haas's Pinot Noir can vary from light ruby red to intense ruby red. The bouquet opens with notes of cherries and raspberries, marzipan and plum jam, cloves and cinnamon, followed by notes of mountain woods. On the palate it is fresh and lively, with elegant tannins, acidity with a wild strawberry flavor, and a gratifying balsamic extension. It is always good, whether with polpo in galera (a Tuscan dish made with octopus) or with roasted pigeon, Wagyu beef, or pizza.
