Corpo medioVernaccia di San Gimignano is where the story of Panizzi began. The estate introduced its signature label in 1989, helping to renew appreciation for this historic Tuscan white grape. The 2025 vintage offers a precise, food-friendly expression: delicate aromatics, an energetic palate and a distinctly savoury finish. It is made from organically grown grapes.
The grapes are sourced from four estate vineyard areas around San Gimignano: Larniano, Montagnana, Santa Margherita and Lazzeretto. Predominantly tuffaceous, sandy soils contain varying amounts of yellow clay. The 2025 blend contains 95% Vernaccia di San Gimignano and 5% Incrocio Manzoni. Grapes are hand harvested from vines trained using spurred cordon and Guyot systems.
After gentle pressing, fermentation takes place in temperature-controlled stainless-steel tanks. The wine then remains on its fine lees for around five months, adding texture while retaining its fresh varietal profile. A further period in bottle completes maturation before release. Oak does not define the ageing of this cuvée.
The wine is pale straw yellow with green highlights. The nose opens with linden blossom, broom flower, chamomile, lemon zest, apple and pear. Its dry palate brings a satisfying balance of texture and acidity, leading into a lingering saline finish. The 2025 vintage earned 92 Falstaff points in 2026.
Excellent alongside sushi, raw fish, light fried seafood, seafood pasta, white meats and fresh cheeses. Serve at 10–12°C. Presented in a 750 ml bottle, with 13% alcohol; contains sulphites. It is enjoyable young and can also develop over several years with suitable cellaring.
