Franciacorta Satèn di Pavò comes from Chardonnay grapes from the highest part of the hilly vineyards of Provaglio d'Iseo, at the north-eastern edge of the appellation, planted on soil of morainic origin. The alcoholic fermentation of the must takes place partly in steel and partly in barriques or large casks. The malolactic fermentation then starts spontaneously, then the wine ages in steel for 5 months and again in wood for a variable period between 6 and 12 months. Bottled with the fermentation yeasts for the second fermentation, it rests sur lie for a period of at least 30 months.

Franciacorta Satèn di Pavò is straw yellow crossed by a multitude of fine bubbles. The nose opens refreshing with lemon zest then articulates in aromas of dried flowers and yellow fruit, with hints of enamel and balsamic notes. In the mouth, it has a nice citrus freshness, good flavour and a certain softness at the same time. Perfect to start the meal with a seafood salad, or to continue with the classic sole alla mugnaia.
