The Etna Bianco di Planeta, produced in the Etna Feudo di Mezzo winery since 2012, is 100% Carricante, from the Montelaguardia vineyard in the municipality of Castiglione di Sicilia. We are very high, between 690 and 720 metres above sea level, on black soils due to the lava sands, very rich in minerals. The harvest takes place in the first half of October; the grapes are immediately cooled to 8° C before selection, destemming and soft pressing. The decanted must is decanted and ferments at 15° C, in stainless steel, except for 15%, which ferments in tonneaux. The wines thus obtained remain on the fine lees until February with continuous agitation. Even the brief ageing of about a month takes place partly in steel, partly in 50-hectolitres in wood.

ETNA BIANCO PLANETA: TASTING

Planeta's Etna Bianco enters the glass with a soft and elegant golden yellow. On the nose, it is immediately captivated by notes of scrub flowers, such as helichrysum and calicotome, and aromas of acacia, then by references to fresh almond, white peach and burnt rock. Excellent with a good buffalo mozzarella, anchovies and basil, as with a swordfish tartare or simply with spaghetti alla pumarola.
