Corpo leggeroBenanti Etna Bianco is the result of the selection of grapes from vineyards located on the eastern and southern sides of Mount Etna, a particularly well-suited location thanks to the high altitude (700-950 meters above sea level) and abundant luminosity. This wine is made from 100% Carricante, a white grape variety native to Mount Etna. The soil is sandy, volcanic, rich in minerals, and slightly acidic. The vines, ranging in age from 20 to 60 years old, are grown with both the ""alberello"" and espalier methods. The hilly mountain climate is humid and rainy in the coldest season, is well-ventilated, and has significant temperature fluctuation. The grapes are harvested by hand in the first ten days of October, then de-stemmed and pressed with soft squeezing. Fermentation takes place for about 15 days at a controlled temperature of about 18° C in steel tanks, using specific indigenous yeasts chosen after a long experimentation in the vineyard and cellar. The wine is left to mature in vats on the fine lees for a few months before being bottled; it rests in the bottle for an additional 2-3 months before being placed on the market.
Benanti Etna Bianco has a straw yellow color with greenish hues. The nose is intense and elegant with hints of apple, broom flower, prickly pear, mint, and parched earth. On the palate it is tight and minerally with a pleasant acidity and refreshing balsamic persistence. Excellent with spaghetti with anchovies and breadcrumbs.
