Corpo medioChampagne Jacquesson Cuvée 747 Extra Brut is created from a blend of wines made from Chardonnay (57%), Pinot Meunier (22%), and Pinot Noir (21%) grapes. The vineyards of origin are located in the communes of Aÿ, Avize, and Oiry - all falling within the exclusive Grand Cru category - and in the communes of Dizy and Hautvillers (Premier Cru). The cuvée is completed with 33% reserve wines. After an initial fermentation in oak barrels with aging on fine lees (fermentation residues that serve to enrich the wine's aromatic profile and structure), the reserve wines are added. This is followed by a secondary fermentation in the bottle using the traditional Champenoise method, with aging on the lees for at least 36 months.
The Jacquesson Cuvée 747 Extra Brut Champagne captivates in the glass with its straw yellow color with golden reflections, enlivened by a fine perlage. On the nose, there is an intense interplay of candied yellow-fleshed fruit, dried fruit, and yellow citrus intertwined with mineral notes. The palate is rich and silky, supported by a fine aromatic complexity and deep mineral freshness that lingers in the long finish. Excellent as a wine for the entire meal, it pairs well with fresh and aged cheeses and delicious seafood recipes featuring fish and shellfish.
