After manual harvesting, the bunches, carefully selected, were sent for vinification which included a brief maceration phase of the must in contact with the skins, giving the wine its characteristic pink color. The alcoholic fermentation took place spontaneously, with the help of indigenous yeasts and without temperature control. Before being commercialized, the Cerasuolo d'Abruzzo DOC 2018 di Valentini produced with natural methods, without clarification or filtration, aged for 12 months in oak barrels (the same ones where fermentation took place) and for an additional 12-24 months in the bottle.
In the glass, the Cerasuolo d'Abruzzo DOC 2018 di Valentini presents an intense cherry pink color. On the nose, it expresses aromas of cherry, raspberry, and small berries intertwining with subtle hints of undergrowth and light notes of flint and sweet spices. The palate is harmonious and full-bodied, enhanced by vibrant freshness combined with elegant minerality that lingers in the long finish. It pairs well with a variety of cold cuts as well as tasty land recipes based on vegetables and red meats. Also excellent when paired with white meats.
