Corpo robustoThe Cannonau Le Anfore by Elena Casadei is part of the "Le Anfore" project: wines born from a simpler and more natural idea of winemaking, aimed at producing wines that faithfully express the characteristics of different terroirs and grape varieties. Every year, Elena Casadei selects only the varieties that have delivered the best results in amphora among all the wines from the family estates: Tenuta Casadei in Suvereto, Castello del Trebbio in Chianti Rufina, Olianas in Nuoro and Allume on the island of Giglio. This selection may therefore vary from year to year, guaranteeing absolute quality and consistency with the project’s philosophy. The Cannonau comes from clay-sandy soils of limestone and basaltic origin. During the harvest, the bunches are carefully selected; vinification takes place without added yeasts, and maceration lasts for 25 days. After malolactic fermentation, the wine is racked and continues ageing in amphora for 8 months.
The Cannonau Le Anfore Elena Casadei has a bright ruby-red colour; on the nose, it offers an immersion into the Sardinian Mediterranean scrub, with notes of myrtle, liquorice and cherries. On the palate, it is complex, savoury and tannic. The most appropriate pairing is with fragrant roast suckling pig, but it also goes well with aged sheep’s milk cheeses.
