The Baffonero by Rocca di Frassinello was obtained from 100% Merlot grapes grown in the territory of Gavorrano, in the province of Grosseto. The original vineyard, called Baffonero, is located at the foot of the cellar designed by the internationally renowned architect Renzo Piano and is situated on clayey soils, rich in structure, at an average altitude of 90 metres above sea level. The harvest was carried out in the first half of September with a very low yield in favour of quality, equal to 25 quintals per hectare. Before release, Rocca di Frassinello's Baffonero Merlot Maremma Toscana IGT 2016 was aged for 14 months in new French oak barrels and for a further 12 months in the bottle.

Rocca di Frassinello's Baffonero Merlot is presented in the glass with an intense ruby red colour. On the nose, it expresses intense aromas of blackberry, blueberry and small dark berries that intertwine with delicate spicy hints of vanilla and evolved notes of cocoa, tobacco and coffee. The sip is enveloping and robust, enhanced by a velvety tannic texture and a pleasant freshness combined with an elegant minerality that persists in the long finish. At the table, it goes well with cured meats and semi-aged cheeses but also with land recipes based on red meats or game.
