Albiola represents one of the oldest settlements of primitive Lazio, possibly part of the Latin League, dating back to the second phase of Lazio civilization, around the 9th century BC, with an importance comparable to that of early Rome. Albiola is a rosé wine made primarily from Syrah grapes (85%) and a portion of Sangiovese (15%). The winemaking process follows the “saignée” or bleeding technique, which involves draining part of the must from the tank after a brief cold maceration on the skins (8-10°C). Fermentation, which takes place separately at around 18°C for 8-10 days in stainless steel tanks, produces a rosé with great character, a structure similar to that of a red wine, and fruity and floral aromas.
The wine displays an intense rosé color with violet hues. The bouquet is rich, with notes of small berries, particularly raspberry and red fruits. On the palate, it reveals great consistency and a long, fruity finish. Perfect to pair with a seafood soup with fresh tomatoes or a selection of mixed cold cuts.
