The Sauvignon by Kante comes from vineyards planted on the Karst Plateau in Trieste, located at an average altitude of 250 meters above sea level and composed of red earth and limestone soils that are characterized by strong drainage. The vines are planted at a density of 5,500 plants per hectare with a yield of 1 kg per plant and are cultivated using the single Guyot training system, a technique characteristic of this grower for more than 20 years. The vinification of this white wine foresees 12 months of aging in old French oak barrels and 6 months of stabilization in steel tanks. The wine is bottled without filtration.
The Sauvignon by Kante has an intense luminous straw yellow color. On the nose, it strikes a good balance between the varietal notes of native herbs, fruity notes of yellow plum and mandarin, floral notes of wild flowers, jasmine and rose, and the salty minerality typical of the Karst terrain. In the mouth it is salty and rich in aroma, fresh and balanced by the glyceric outfit; the close is long and balsamic. To be tasted on its own, then paired with Chinese pork and cabbage dumplings with a sweet and sour sauce, or the local dish of Ljubljana steak, similar to schnitzel stuffed with cheese and ham.
