The Sauvignon di Pighin was produced from 100% Sauvignon di PighinSauvignon Blanc grapes grown in the Spessa di Capriva area, in the province of Gorizia. The vineyards here, facing Southwest, are located on hilly terrain characterized by the so-called Ponca, a marly rock of Eocene origin very rich in minerals, at an altitude ranging from 150 to 180 meters above sea level. After the manual harvest, which took place in the first decade of September, the clusters were transported to the cellar for vinification. Alcoholic fermentation took place in stainless steel tanks at a controlled temperature of 15-20°C for a period of 15-20 days. The aging was done for several months in stainless steel tanks.
SAUVIGNON COLLIO PIGHIN: TASTING
The Sauvignon di PighinSauvignon Collio di Pighin presents itself with a straw yellow color with greenish reflections. On the nose, it releases scents of peach and yellow-fleshed fruit that meet floral hints of elderflower and vegetal notes of yellow bell pepper and sage. The taste is fresh and mineral, with excellent taste-olfactory consistency. At the table, it pairs well with cheeses and vegetarian dishes as well as with delicious seafood recipes based on white fish, shellfish, and crustaceans.Product specifications
