The Sauvignon di Sirch is a fresh and mineral interpretation of this grape variety original from the Loire, brought to Friuli under Habsburg rule and now part of the local winemaking tradition. "Crossroads of waters, lands, and peoples," the Sirch vineyards have the Judrio river to their right, marking the Italo-Slovenian border, and the Natisone river to their left, defining the DOC area of Friuli Colli Orientali. We are located between the municipalities of Cividale del Friuli, Prepotto, and Premariacco (Orsaria), on hills ranging from 100 to 350 meters above sea level, homogeneous both in terms of climatic conditions and geological origin. The Julian Alps, situated in the background, protect the area from the cold currents of the North, while the Adriatic Sea, opening in front, ensures constant healthy ventilation. The soils are composed of an alternation, called "ponca" in Friulian, of marls (limestones and calcareous clays) and sandstones (cemented sands). The Pinot Grigio grapes are destemmed and gently pressed. The must undergoes static decantation at low temperature before fermenting in stainless steel tanks at a controlled temperature of 16°/18°C. The wine then rests on the lees for several months with periodic batonnage, followed by further aging in bottle before commercialization.
The Sauvignon di Sirch is a bright straw yellow wine with greenish reflections. On the nose, it entices with verbena flowers, lemon yogurt, herb butter, and plenty of white fruit; on the palate, it is satisfying, fresh, creamy, with floral notes. Excellent with risotto with artichokes and langoustines.
