Satrico di Casale del Giglio was born from a blend of Chardonnay (40%), Sauvignon (40%) and Trebbiano Giallo (20%) harvested at the beginning of maturation to best preserve freshness and aroma. After the selection and the soft pressing, the free-run must was separated from the skins to start the fermentation process which lasted for 7-8 days at a controlled temperature. The refinement took place for a few months in steel vats. The name Satricum derives from the homonymous ancient city founded by the Latins in the Pontine Plain, whose oldest traces date back to the 9th century BC.
Satrico Lazio IGT by Casale del Giglio is presented in the glass of a lively straw yellow colour. On the nose, it reveals aromas of ripe yellow pulp fruit combined with citrus and mineral notes. On the palate, it is soft and reveals a subtle freshness accompanied by a strong sapidity. Excellent as an aperitif, it goes well with vegetarian dishes, fresh and semi-aged cheeses as well as recipes based on fish and shellfish.
