The Salice Salentino Il Pumo di Cantine San Marzano comes from the vineyards of San Marzano di San Giuseppe, a small town in Salento, an ancient Arbëreshë center of the region. We are at an altitude of 134 meters above sea level, on the plateau of a limestone hill in the Murge Tarantine. The soil is a shallow and clayey medium mixture on the surface, with a good presence of skeleton. This Salice Salentino is composed of 85% Negroamaro and 15% Malvasia Nera di Brindisi. The harvest of the two grapes takes place in the second half of September; the thermo-controlled maceration lasts about 10 days and the alcoholic fermentation is carried out with selected yeasts. It is then briefly refined in steel.

The Salice Salentino Il Pumo di Cantine San Marzano has a ruby red color with garnet reflections. On the nose, it is rich in red fruit in jam and aromatic herbs with a balsamic vein. On the palate, it has a savory mass and a certain freshness. It pairs well slightly chilled with rigatoni with sausage and mushrooms.
