Sàgana di Cusumano is a Nero d'Avola made from the historic Vigneto del Torrone Bianco, so called for its characteristic soil as white as snow, of calcareous nature; we are in Butera, Caltanissetta, within the San Giacomo Estate, at an altitude of 400 meters. The vines have an average age of 30 years and ripen the grapes within the first 10 days of September. The fully destemmed clusters ferment and macerate for about 2 weeks without ever raising the temperature above 30°C, so as not to compromise the aromatic expression. The wine undergoes malolactic fermentation in 20-hectoliter barrels, and then matures in these same barrels for 18 months; it then undergoes additional aging in glass before being marketed.
Sàgana di Cusumano has a bright ruby red color. On the nose, it smells of Bulgarian rose, cherry and plum jam, Mediterranean balsams, black pepper, and sweet spices. In the mouth, it is warm and enveloping, but at the same time fresh and salty, with delicate and mature tannins. It pairs perfectly with stewed wild rabbit, in the traditional recipe of Caltanissetta.
