The Ronchedone Rosso di Ca' dei Frati is obtained from Marzemino, Sangiovese, and Cabernet grapes grown in the hilly, morainic areas near Lugana di Sirmione, in the province of Brescia. After the harvest, carried out with a yield of 80 quintals per hectare, the grapes were transported to the cellar for vinification. For this red wine with an incisive character, the must maceration in contact with the skins and the alcoholic fermentation took place in stainless steel. The aging, instead, took place for 14 months in barriques and for an additional 10 months in the bottle.
The Ronchedone Rosso di Ca' dei Frati presents itself in the glass with an intense ruby red color. To the nose, it expresses aromas of ripe wild berries and sour cherry under alcohol that intertwine with balsamic hints and subtle spicy notes. The taste is powerful and harmonious, enhanced by a well-polished tannic structure and a distinct fresh-savory trail that lingers in the fruity and spicy finish. It pairs well with aged cheeses as well as with elaborate recipes based on red meats or game.
