The Prosecco Rosé Extra Dry Millesimato by Casa Sant'Orsola is one of the latest innovations in the company's wide range, always in step with the times. The Prosecco Rosé denomination is in fact very recent: after long and fiery controversies, the proposal of the Prosecco DOC Protection Consortium was accepted, to officially include in the specification the Rosé type, in which Glera grapes must be present at a minimum of 85% and the remaining part is made up of Pinot Nero. The further accusation of the choice of an international grape instead of the native Raboso, for example, was rejected by certifying that Pinot Noir has actually been present on the territory since the mid-19th century. This bubble is vinified with cutting-edge winemaking technology and sparkling with the Martinotti method.
The Prosecco Rosé Extra Dry Millesimato by Casa Sant'Orsola is light salmon pink illuminated by the fine perlage. The nose is pleasant in the notes of wild strawberry, wisteria, Pink Lady apple and mint. In the mouth, it is soft, with a good balance between freshness and residual sugar. An excellent aperitif with marinated anchovies, black bread, butter and caramelised red onions.
