The Primitivo Appassimento Passo Marchese di Paolo LeoPrimitivo Appassimento Passo Marchese by Paolo Leo is a 100% Primitivo wine produced from vineyards in Sava and Manduria, in the province of Taranto. The vines are grown as Alberello, typical of Salento, with about 5000 plants per hectare. The harvest generally takes place in the last decade of August, with very ripe grapes that are hand-picked in the early hours of the morning to bring the clusters to the cellar when they are not warm. The grapes are destemmed and gently pressed, cooled to 5°C, and left to macerate on the skins for about 2 hours, giving the must a slight pinkish hue. Following gentle pressing, the must is placed in stainless steel tanks, and fermentation is induced with selected yeasts at a controlled temperature of 15°C.
Paolo Leo's Primitivo Appassimento presents itself as a light ruby red, with purple reflections. On the nose, it is fruity and fragrant, with pleasant notes of wild berries and strawberries. The taste is full-bodied and fresh, with an easy and appealing drinkability. Excellent, slightly chilled, with a slice of bread topped with sausage, stracchino cheese, and broccoli rabe.
